I have deliberately left what you serve your vegan Chinese curry sauce with up to you as it is so versatile.Without cleaning out the pan, add 1 tbsp rapeseed oil and return to a low-to-medium heat. Add the onion and stir fry for 1-2 minutes until it softens. The coconut milk and natural yoghurt in this curry recipe give it a really creamy taste, while the tomatoes and spinach ensure you're getting a veggie punch too. After the 15 minutes is up, add the yoghurt, spinach and chilli flakes and sugar (if using). Stir well and cook for a further 2-3 minutes until the spinach has wilted. Taste and season with extra salt or sugar to taste if needed.
