Description

Developed in Italy by Saracino, Pasta Topis a luxury quality sugarpaste icing that works extremely well in warmer, humid conditions - much like Massa Ticino Tropic. Pasta Tophas excellent elastic handling and covering properties andis available in white and comes in a 5kg plastic pail. They both have different ingredients with Sugar Paste Icing being made from icing sugar, gelatine, corn syrup and water and Royal Icing containing icing sugar and egg whites. This makes them rather different from each other. This Sugar Paste contains gum tragacanth, making it pliable and easy to work with. The formulations results in a Sugar Paste which is soft on the underside and firm on the top. This firmness makes it ideal for adding decorations and also topping with colours, dusts and paints. Ingredients; Sugar, Glucose Syrup, Potato Starch, Vegetable fats (Coconut, Hydrogenated Palm Seed), Water, Xanthan, Aroma, Potassium Sorbate, Carboxymethyl Cellulose, Food Colouring (E133, E122*), Citric Acid cup and 2 tablespoons shortening (vegetable fat or white margarine) such as Crisco, Wooden Spoon, Trex or Copha

Not only is this Satinara Sugar Paste used for covering cakes but is also suitable for making sugar models like flowers and characters too. For more intricate models, like fine flowers, some tylo powder can be added to provide greater rigidity. Pro Tip: It’s best to use gel food coloring to color sugar paste, as it doesn’t affect the texture. If you only have liquid food coloring, it’ll soften your paste. Add extra confectioners’ (powdered or icing) sugar to counteract this. You could also add 1 teaspoon CMC powder, Tylose powder or gum tragacanth per 2 pounds and 10¾ oz of sugar paste to firm it up. 4. Mix in the Sugar Stir the light corn syrup, glycerine, salt and optional chocolate into the melted gelatin. 2. Heat and Mix Until Smooth
