An interesting story about the Gibson’s origin is that a popular artist named Charles Dana Gibson invented the drink with a NYC bartender named Charley Connolly.

The olives or lemon twist that are used as a garnish can also be used to add a bit of saltiness to the drink. This can be a nice contrast to the sweet and herbal flavors of the gin and vermouth. To make pearl onions, you’ll need white pearl onions, white wine vinegar, sugar, cloves, and water. Start by blanching the pearl onions for about a minute before cooling them in an ice bath.
