The Plenty kitchen roll is effective, there’s no denying that, but the marketing behind ‘one sheet does plenty’ is definitely a lie.

During these times I have shifted more toward bean and chickpea dishes and I am impressed with the variety of recipes I have found through Minimalist Baker. I’ve often used just hummus as a salad dressing or on a wrap, but mixing it with maple syrup and lemon? The only time-consuming bit is peeling the chickpeas which you can obviously skip if you’re feeling lazy – the flavour is still A+++ even if the chickpeas won’t be as crispy. With a corner of an egg roll wrapper facing you, place 3 tablespoons chicken mixture just below center of wrapper; top with 1 teaspoon each feta and mozzarella cheeses. Peeling the chickpeas was a bit labour intensive, but worth it so they could crisp up and taste a bit nicer.
