Caol Ila distillery was built in 1846 by Hector Henderson, who was bought out from the venture a little over 10 year later by Bulloch Lade. That same vanilla-laden peat smoke is accompanied by a greater amount of wood sugars and caramelly (it’s a real word damn you, spellcheck) notes than younger Caol Ilas, and they meld harmoniously.Several observations follow: age isn’t everything, small differences in strength can produce meaningful differences in flavor, single casks can justify the risks… but mostly: Caol Ila can slay all day.
