I think I might add some spinach or even broccoli to the chickpea curry next time I make this because there will be a next time. The finished dish was dry and a little blah but our eggs were a bit overdone so lacked that jammy yolk to mix in with the chickpeas.

When it comes to ingredients, most are usually easy to find and some a bit harder to come by, but not impossible! Molly breaks the essentials of cooking down to clear and uncomplicated recipes that deliver big flavor with little effort and a side of education, including dishes like Pastrami Roast Chicken with Schmaltzy Onions and Dill, Chorizo and Chickpea Carbonara, and of course, her signature Cae Sal. I’m always trying to trick myself into eating more lentils, and the “Marinated Lentils with Spiced Walnuts and Lotsa Basil” (small eyeroll) was quite good. The format of the recipe pages were easy to read and nicely laid out; I also liked that she included QR code’s to link to videos of certain cooking processes (ie—best way to chop an onion, delobing a pepper, etc.All in all this gave the sauce a real depth of flavour with the lentils adding some good textures too. Fresh new recipes weekly are another bonus inspiration, and there's already been a few that are put into the regular rotation, as they are so very good. I also stirred Greek yogurt in at the end and 1/2 recipe yielded 2 good sized dinner bowls + a generous lunch for one. Definitely catered toward a younger demographic and those new to the kitchen - would recommend if you fall in that target audience. The meatballs are nice enough but the mint doesn’t come through, I wonder if dried mint would amp it up? I LOVE lacinato kale but at least for me in the time given in the recipe, it just didn't soften much in the broth. I love that the celery is tossed in raw at the end and just cooks slightly from the residual heat and retains a lot of crunch. I *did* find a handful of recipes I’d like to try at some point, but nothing jumped into my brain as “I WANT” as much as I expected. If you seek out, celebrate and obsess over good food but lack the skills and confidence necessary to make it at home, you've just won a ticket to a life filled with supreme deliciousness.
