About this deal

I moved from Japan 10 years ago and have been using pudding rice from the supermarket whenever I want to eat Japanese sticky rice. Sushi rice belongs to the round grain rice group, has a sweet aroma and is rather starchy, which is why it becomes soft and sticky when cooked.

The rice used to make sushi is short-grain, but a specific type that has a unique flavour to other short-grained rice and behaves differently when cooked.

In one hand, use a rice paddle to gently fold the vinegar into a rice, while using a fan in the other hand to blow away the steam and cool the rice. Premium sushi rice is not only of a premium quality but also versatile so that it can be used in almost any dish. Look for Japonica rice, cultivated in Japan and Korea – it has a short, rounder grain and a texture that makes it perfect for shaping into sushi.

The short grain Selenio rice variety used for Organic Brown Sushi Rice has characteristics very similar to the Japonica rice that is used to make sushi in Japan. We thought long and hard about adding it to our range as it takes considerably more time to cook than Organic White Sushi Rice, but considering the amazing flavour and addition of whole grains, it is worth it!When I added the sugar and everything to the rice I panicked thinking it tasted too sweet, but then the rice absorbed it and the flavour became more subtle like it was meant to be.
