In some ways, the same could apply to Lorie and Jason’s cake. Although there cake had more wow décor, it didn’t instantly say birthday cake. It could have been a wedding cake at first glance. In the first "dessert round", the teams are tasked with re-creating the dessert made in the crime scene kitchen after three minutes to analyze the clues left from the mess in the kitchen. The first round mystery dessert was a Boston cream pie, which deceptively enough, is actually a cake. The clues that led to this dessert were the ring of chocolate and almonds, indicating the sides were covered in almonds, the spiderweb template for the icing pattern in the ganache on top, and the bowl with remains of pastry cream in the sink. Yes, and they definitely learned as they went on in the show. So the first time in the Crime Scene Kitchen, I think they were just sort of gathering all the information they could. Right. And they didn't pay attention to, was it closed? Maybe where was it placed? Was it next to something else? They didn't pay as much attention to that. And they certainly learned to pay better attention. Recently, FoodSided spoke to the pair about their Crime Scene Kitchen win, how they put their pastry training to work and how their Crime Scene Kitchen showpiece wowed the judges. While the FOX baking competition focused on solving the sweet clues, a few elements helped Natalie and Luis rise to the top. Their classically trained pastry skills gave them an advantage from the start.

In case you missed week or season one, here’s the premise of the show: each week there are two challenges. In both challenges, before the baking actually begins, each team has a chance to ‘investigate’ the kitchen. There are dirty dishes, used utensils, things in the fridge, and definitely some things to fool you (quite a few this week) and throw you off guard just a bit.Successful contestants, what set them apart from those who struggled a little bit more with the clues? First, I bought some good 9-inch pans, and I started keeping fresh baking powder on hand. Freshness makes a big difference in everything connected with cake.

The second challenge in Crime Scene Kitchen is called the Main Event – the Showpiece Round. Whoever comes in last place this round will unfortunately be eliminated and go home.

In a twist, the dessert round did not come with an extra clue for the showpiece challenge. Instead, the least successful baking team will be sent home. To say that this extra ingredient raised the temperature in the kitchen is an understatement. Luis: Human interaction. Just getting to know people, everyone else that was in our group, kind of our group A, just starting to talk to people. The baking team eliminated was Emma and Leslie. The uneven layers were their downfall. After all the tears in last week’s challenge, just making the finale was a positive. Unfortunately, the execution let them down. Did the Crime Scene Kitchen winner cake it to the limit with their showpiece? Pretty soon I couldn’t pass a restaurant supply place. One day I was a little early on my way downtown, so I stopped off at Surfas in Culver City, telling myself it was just to kill 15 minutes. First thing I knew I’d bought a small food mill. Well, it is handy if you’re making a quantity of fruit puree too small to be done in a food processor. The French idea of frosting basically seems to be something that lies flat so you can decorate it. They have no use for our unruly American frostings -- no cream cheese frosting, no good old American seven-minute icing. And all that piped frosting they do -- forget it. In my book, real men don’t know a star tip from a drop flower tip. While everyone wishes for the glory and pastry crème, the pastel Thunderdome is unpredictable. Former success does not guarantee that moment in the winning spotlight. Did the pressure become too overwhelming? Did the Crime Scene Kitchen winner shine during the dessert round?And, their finale cake impressed with both flavor and décor. From the bananas foster filling in the chocolate cake layer to the slice of birthday cake topper, this cake stood out among the three finalists. Even more impressive was Natalie’s revelation that she had never made that the bananas foster component previously. It was clear that this baking team was going all out. I’m a different person now. People see me and say, “Hey, Cake Guy!” Because I’m usually carrying a cake around with a goofy grin on my face.

The first six teams investigated the crime scene kitchen, and for the most part, it does seem like everyone was on the same or a similar wave length. All six baking teams seemed to figure out that not only was this a pie, but it’s a citrus pie. Now it’s about how many elements of the pie the teams get right. The flavors that had to be used in Yolanda’s birthday cake were raspberries, caramel, chocolate, coffee, cocoa powder and vanilla bean. The three teams incorporated those flavors quite differently. But, flavor was only one component of this challenge. Though we got cake making from the French, we Americans have created our own repertoire. Notably, we make our cakes light with the use of baking powder (French cakes are mostly leavened with beaten egg white), so our cakes tend to be taller. French cakes are usually little short one-layer jobs anyway, and any cake under 4 inches high just makes me sad. The high egg-white content of French cakes makes a lot of them dry and chewy, so they have to be soaked with syrup before being frosted. Once I’d grasped the basics (and tried just about every recipe in “Southern Cakes”), I moved on to Rose Levy Beranbaum’s “The Cake Bible,” and “The Art of the Cake” by her mentors Bruce Healy and Paul Bugat. Both books are crammed with sophisticated techniques, and I now follow Beranbaum’s foolproof method of making butter cream frosting. With Natalie and Luis, they brought their Vegas flare to the cake. It was very, very clear that this cake was Yolanda’s birthday cake. From the decorative slice as a cake topper to sprinkles reveal in the top layer, everything about this cake said it was a celebratory cake.
