About this deal

Last month I made one of my favourite Italian ingredients. Mascarpone, it was so easy and the result was amazing. So naturally I had to use it as an ingredient in something. Known in the UK by the rather undignified title of ‘spaghetti hoops’, anelli are a pasta variety that has become synonymous with childhood nostalgia, served in a soupy, tomatoey sauce fresh from a Heinz tin. However, despite these slightly unsophisticated associations, they are in fact an authentic Italian pasta shape. In the city of Palermo, you can also find anelletti al forno in all the classic rosticcerie (Italian specialty stores with pre-cooked dishes), where it’s usually served on small square trays like street food Anelletti al Forno by Salvatore Fraterrigo Finely chop the onion along with the carrot, celery, parsley and garlic to sauté in a pan with plenty of oil. Once the onion is translucent, add the ground meat and brown over high heat for a few minutes. Then add the red wine. Let the alcohol cook off, then add the tomato paste and tomato sauce. Add the bay leaf, season with salt and pepper and let cook over medium heat for 1 ½ hours, stirring often. The ragù should have a fluid, creamy consistency by the end of cooking. Halfway through cooking, add the peas.

Anelli, which means “little rings” in Italian, are small, thin rings of pasta that originated from Sicily, Italy. These little hoops of pasta are often found in soups and salads, particularly in light, summery dishes. Anelletti al Forno is a wonderful dish to spoon up for a crowd or for a mid week meal for your family, you can even make it meatless if you prefer, kids love it as well as adults because they look like spaghetti O’s.Anelli pasta came from Sicily, where it was traditionally used to make timballo. Timballo is a Sicilian baked pasta dish featuring pasta, rice, meat, fish, or vegetables. Both anelli and tortellini are round, ring-shaped pastas. However, there is one key difference: tortellini is a type of stuffed pasta while anelli is not. Anelli are small, thin rings of pasta often used in brothy soups and pasta salads while tortellini is often paired with a simple sauce to elevate its filling. Although these pasta shapes aren’t interchangeable, they are both unique and delicious in their own right. Traditional Dishes Suitable for Anelli Pasta If you prefer a meatless version, omit the meat and add chunks of fresh mozzarella instead, believe me it’s all good! We have a friend who is an amazing cook and he always adds a couple of tablespoons of Mascarpone to his Risotto instead of cream, and I have to admit it is so good.

Anelletti is a pasta type that is ring shaped and in this case is baked, ( al Forno) between layers of marinara and bechamel sauce, of course there’s cheese and other goodies included like Italian sausage and peas. When I went home to Toronto at the beginning of the summer, I wanted to make a Pasta Recipe with Mascarpone and believe it or not it took me a quite a few stores before I found a container, and the price was outrageous. I like the flavor of Italian sausage so I used that but other versions use ground meats. Also in my house I always have homemade marinara stashed in my freezer seasoned with garlic and basil, so that’s what I used here, s you can make homemade yourself or to make things easier and go a little faster you can use a good quality store bought one, I repeat… Good Quality! ( I won’t tell). Like several other Sicilian baked pasta recipes, this dish is made with a meat ragu with peas, eggplant and hardboiled eggs. Making the rings isn’t too difficult. After kneading, allow the dough to rest, then cut off small pieces, roll them out into thin ‘snakes’, cut the snakes into 6-7cm lengths (2.5”), wrap them around your index or middle finger and seal the ends together. Step 2 gather the ingredients for the alla pecorara sauce. Freeze and cook from frozen.

Well those are anelli! I recently read that not only are SpaghettiOs still being produced, but they sell over 150 million cans a year! When Campbells first launched them on the market they used the advertising tag line"The neat round spaghetti you can eat with a spoon" I just love that! Round spaghetti! Today, anelli can be found not only throughout Italy but also all over the world. It is especially popular in Puglia and Sicily, where its use isn’t limited to being served as pasta in a can. What Does Anelli Mean? You will find a similar combination of ingredients in a couple of my other Sicilian pasta recipes such as lasagna and pasta al forno. Possible variations of this dish Anelli, also known as anelletti (Italian for “little rings”) is a small, circular pasta . These pasta rings can come in two sizes, and the smaller size (a noodle you might recognize from the American pantry food SpaghettiOs) is called anellini. Where does it come from? Cover the top of the pasta with the slices of eggplant hanging over the sides of the pan. Top with additional eggplant slices to completely cover the pasta.

Other than the traditional meals Sicilian people make with anelli pasta, anelli and anellini can be used to make soups and other, more straightforward pasta dishes. How to make pasta recipes with this Sicilian favorite just requires a bit of imagination! Anelli is perfect for casseroles and easy baked pasta recipes, like the baked ziti with marinara and mozzarella that has become so well-loved in America. What kind of anelli can I buy from Supermarket Italy? I made the dough in the same way as other pasta doughs by mixing the flours then adding the eggs and olive oil and then water as required. Durum wheat semolina has a higher gluten content than soft wheat flour, so pasta dough made with it requires a bit more kneading to get it soft and pliable. Make the rings by wrapping thin 'snakes' of dough around your index finger and sealing the ends together. Today is Monday the 11th of October and restrictions are easing across NSW and we can now go out to eat and have people over. Just sauté the soffrito, then add tomato passata or chopped peeled tomatoes and salt and pepper to taste. Simmer for 15-20 minutes and then take it off the heat and mix in the ricotta. I kept aside some ricotta to add to the plates before serving. Step 4 Cook the vegetables. Wash and cut the eggplant, zucchini and sweet peppers into cubes. The sautéed veggies.

Pasta is a good source of fiber, iron and B vitamins.
