Sitting at the heart of the Cairngorms National Park, Dalwhinnie opened in 1898 and is one of the highest-operating distilleries in Scotland. It was originally called Strathspey, but was changed within a year of being built. For most people the classic Dalwhinnie 15 Year Old whisky is the best place to start. The heavy sulphurous new make has been tamed by long ageing to produce something gloriously smooth and honeyed, with just a little smoke and an underlying meatiness. A limited edition single malt from Dalwhinnie, originally released in 2002 for The Friends of the Classic Malts. Matured for 15 years and bottled at cast strength, there were 4,000 bottles produced. This second release of double matured whisky for the Distillers Edition from Dalwhinnie sees Highland single malt that was distilled in 1981 finished in oloroso sherry casks. Bringing some soft fruit character to the wormtub condensed whisky. With a distinct honeyed and fruity taste, Dalwhinnie whisky has become one of the most loved highland whiskies around. It is one of the few whiskies that straddles the Highland/Speyside boarder giving it a uniqueness that few other malts can offer.

One of the oldest single malts one can find from the Dalwhinnie distillery. In 1905 it was sold again, this time to an American company called Cook & Bernheimer making it the first – but not the last – time a Scotch whisky distillery would be bought by a North American distiller. Then in 1926 Dalwhinnie was bought by the Distillers Company, a forerunner company of Diageo, where it remains to this day. But the excitement didn’t end there as it closed in 1934 following a fire in February of that same year, reopening once more in 1938. The distillery lost its floor maltings in 1968 and then in 1987 the distillery was treated to a thorough modernisation. Only things didn't quite go to plan when the traditional worm tubs were removed and shell and tube condensers installed, because the new make just didn’t taste the same. So eight years later the distillery was refitted and (hooray!) the traditional worm tubs were reinstated. A stunning Dalwhinnie from Diageo's Special Releases, this was launched in 2012. It was distilled in 1987 before a 25 year maturation.
