The top three brands were Mae Anong, Mae Ploy, and Maesri. Mae Anong and Maesri were described as having smooth, round flavors with Mae Anong being slightly more flavorful than Maesri. Mae Ploy ended up being too salty for the boyfriend and me after the addition of fish sauce as called for in my recipe, but it did have a nice heat and depth of green curry flavor. Curry dishes originated in India, but it’s also used as an umbrella term to describe other dishes through Asia and beyond, and even within India there are hundreds of varieties of curry – though you wouldn’t know it from our supermarket shelves. If you make your own green curry paste, you can skip the spicy chillies without compromising on flavour! If you added these first, pounding them would release a fair amount of liquid, which will decrease the amount of friction between the ingredients and the mortar and pestle, which in turn makes it more difficult to break down the hardier ingredients. So glad I made my own paste. I grow my own thai chillies and thai basil so very fresh ingredients .

Very good recipe! But.... if you make the paste yourself... there should be a note "wear googles and some protective gloves". xD If you feel the same way, then friend, this tofu green curry is for you!
