Please note brown sugar makes the pudding softer and richer. No more waiting and watching with anticipation as it bakes in the oven, but instead, having one of the best Scottish desserts ready in not much longer than a TV commercial break!

PS: I just read some of the negative comments & thought I’d add- in addition to microwaves varying in power, the cup size and flour used will alter the recipe. I added a bit more liquid to my batter and topping and zapped it in 10 sec bursts until just done. I made two at once which increased the cook time quite a bit. Thanks for a great recipe! I tried making a mug dessert once when my oven wasn’t working but I think I overdid it horribly as it was so dry! Would definitely try a premixed version to see if it came out any better. Home-made cakes donʼt come much simpler than this! Spoon through zesty, spiced yogurt to reach the glorious sponge beneath. But this self-saucing mug pudding is definitely an exemption. It's rich, fluffy, and moist; it even rivals the classic oven-baked version! As you can see in the top photo, I served my son’s in a bowl with a few banana chips. Me? I couldn’t wait. I just spooned ice cream into the mug. Your dessert dilemma is sorted.

Not quite sure what could've gone wrong but if you ensure you just mix the SR flour, sugar, milk and cocoa together first (not too much though) and then carefully sprinkle the extra cocoa, brown sugar and hot water on top, it should work.
