Use food processor or blender to puree ginger, garlic, apple, red pepper and fish sauce until smooth texture is achieved. Good quality gochugaru makes a big difference in kimchi. In addition to gochugaru (고추가루, Korean red chili pepper flakes), garlic and ginger, kimchi recipes typically call for various jeotgal (젓갈, salted seafood) for the distinct pungency and depth of flavors and to aid the fermentation process. Storing kimchi at room temperature, on the other hand, would promote the fermentation process. While it is perfectly fine to let kimchi continue to ferment by storing it at room temperature, you need to keep a watch for the signs of spoilage.

To make a version that’s suitable for vegetarians and vegans, simply leave out the fish sauce and saeujeot. Generously distribute salt between the leaves, working it all the way down to the core. Place the cabbage leaves in a shallow bowl and leave them at room temperature for 2 to 6 hours.

Kimchi Ingredients Needed

Kimchi is a fermented dish made from a range of vegetables including cabbage, greens leafy veggies, carrots, and radish. It can be added with spices, herbs, and seasoning to enhance the flavors.

That being said, I’ve seen other people using Red Boat 40N and Three Crabs fish sauce quite successfully in their kimchi. I wouldn’t know how, or if, the taste differs compared to when you use Korean fish sauce. I’m too scared to let my hard work on kimchi fail this way, so I haven’t tried it myself. But one of these days, I shall sacrifice on your behalf.
