Description

Fresh raspberries are the stars of French almond cakes. You can replace them with other fresh fruit or frozen berries, but use them unthawed to decrease the risk of color "bleeding" into the batter mixture. Salt. In France, there is no particular mould for a friand, something which I discovered the hard way when I went in search of one. The mere elusiveness of this friand tin suddenly made me want one desperately, even if I hadn’t baked a friand in nearly a decade. But the major difference lies in their shapes. Friands are shaped in special oval aspic molds, while financiers are shaped in rectangular molds. Friand tin Friands were, however, created by a French chef working in Australia in the 1990s, who decided to bake the traditional French financiers in an aspic mould to produce a much larger cake, almost the size of a muffin. And, hence, the friand was born.

Size. Choose the right size cake tin for your cake so that it will cook for the correct length of time and not overflow. Serve them with a cup of your morning coffee or afternoon tea. Bring them to parties and picnics, or put them in a lunch box. What is a friand? The flavoured icing sugars Sugar and Crumbs have been pioneering over the last year or so are really very good. Using them in meringues, macarons and buttercream toppings is the obvious way forward and they work very well in those (I think a very romantic option for dessert on Valentine’s day would be blueberry meringues made into an Eton mess with fresh berries and whipped cream but I wanted to try and think a little outside the box for this post). Stir in 120g chocolate chips into the friand batter before pouring into the friand tin.

Blueberry Friands are simple to make, perfect for an impromptu afternoon tea or an easy school lunchbox filler. There are 4 main steps: Star anise is optional, but it brings a beautiful flavor you don't want to miss. Use ground star anise or make it yourself by crushing three whole star anises in a spice grinder and passing it through a mini-sieve two to three times. If you wanted to make these friands gluten free, you could easily swap out the all-purpose flour and use almond meal entirely.
