About this deal

Tablea is different from a hot chocolate mix because it contains more natural fat. To make the cocoa powder used as the base in most hot chocolates, companies take the aforementioned cacao mass and press out most of the fat, to use in cosmetics and other industries. There are hundreds of thousands of Filipino farmers who each have their own story of connection to cacao, some longer & more strongly-voiced than others. But how the Philippines got to this low point of cacao production is due to a combination of several factors, not all of which are under farmer control. Most important to note is the downturn of Filipino cocoa production in the 1980's, neighboring countries' growing cacao industries, and fluctuating prices of related crops, like coconut.

Bonus: tableya is vegan, since it's made of 100% cacao, and you can choose what type of sweetener and creamer to add, if any. Some people also like adding espresso or liquor or even spices for a variation on the traditional type.

You can tell the difference between these two candies by either one of two ways: 1) the name 2) Flat Tops are wrapped in orange, white, and silver foil while Curly Tops are wrapped in red, white, and gold foil. Look in the baking aisle, alongside the sugar. Many Asian and Latin markets also carry cacao tablet variations. What is that white stuff on the chocolate? Is that mold on the cacao tablets? As the story goes, the Spaniards brought cacao from Mexico under the Galleon Trade in the late 1600’s. From the Philippines, cacao was then transported to neighbouring countries like Indonesia, Malaysia, and Vietnam; literally making the Philippines the Chocolate Gateway to the rest of Asia. Other not-to-miss Cebu chocolate experiences include Argao Guilang’s Tableya, a family business that offers an interactive tour of their chocolate kitchen. But the boom didn’t last. A culmination of land reforms and pod borer infestations decimated a large percentage of the cacao population, and the industry has never fully recovered.

My intention as a chocolate maker is to focus exclusively on Filipino cacao to create the best chocolate possible with minimal ingredients,” he says. The only question is: would you like your chocolate with rice, or do you prefer to drink your chocolate? Creating Oodaalolly was another way for me to get in touch with my Filipino heritage,” Hernan tells me.

But, for the Filipinos, we’re really getting into the chocolate scene right now, because we have this sense of growing pride in our own local products.” Depending on the region you’re in and the time of year, Filipino hot chocolate may also contain crushed nuts, cinnamon, vanilla, nutmeg or even peanut butter – every family recipe is a little bit different. Globally-renowned, over the years, their cacao has been acclaimed by several awarding bodies—such as the Academy of Chocolate, Great Taste Award, and the International Chocolate Awards—gaining 54 accolades in total! (On top of that, they’ve also launched an international boutique in Tokyo!)In addition to that, passing by the Ricoa Chocolate Factory is a treat in itself. Amidst the hustle and bustle of traffic, you can smell traces of their signature chocolate in the air! Flat Tops Reminiscent of “Turon”—a Filipino street food containing deep-fried banana and sugar— this treat is scattered with banana chunks, caramel crisps, and sesame seeds that seamlessly blend. Very little of the Philippines' cacao has traditionally been fermented. To be fair, it didn't really need to be, as the majority of their cacao was of a criollo varietal from Mexico, and therefore naturally less bitter. But part of the government's efforts to increase cacao production include improving how and how much of the country's cacao is fermented.

And Hernan takes his oath to minimalism seriously. Browsing through Oodaalolly’s collections , you won’t find any fusion or jazzed up chocolate confections over here. Oodaalolly currently offers three varieties of single roast, single origin chocolate bars: 70% dark chocolate, 60% milk chocolate, and 70% dark chocolate with almonds and sea salt. Fermentation is one of the steps in chocolate making which develops many of the flavors we associate with chocolate. So the unfermented or under-fermented beans traditionally used for preparing tableya simply aren't suitable for chocolate-making. Neither, or the most part, are the beans processed using the techniques taught by the Mars company a few decades earlier.Tangy and roasted, this vegan-friendly bar is a masterful combination of banana, dried fruit, and caramelized coconut. Classic and charming, Malagos 65% Dark Chocolate Bar is an eight-time award-winning delicacy, which recently won bronze from the 2020 Academy of Chocolate Awards!
